Covered Apple Cakes
This month we are giving you a delicious apple recipe from Thurgauer Landfrauen (Thurgovian Rural Women's Club)
Ingredients
Dough
125 g Butter
100 g Sugar
3 Egg yolk
1/2 packet of vanilla sugar
1 lemon, juice and rind
250 g flour
1 tsp baking powder
Filling
5 - 6 apples
100 g sugar
1/2 tsp cinnamon
Meringue
3 egg whites
100 g icing sugar
100 g ground almonds or hazelnuts
Preparation
- For the dough Stir butter, sugar, egg yolk, vanilla sugar and lemon until fluffy, add flour and baking powder and work into a dough
- Line the bottom of a greased springform pan, pull the edges up about 2 cm
- Blind bake in a pre-heated oven at 200 degrees for 20 minutes
- For the filling Core the apple and grate, mix with lemon juice, sugar and cinnamon and spread on the pre-paked cake
- For the meringue Whisk the egg whites until stiff, carefully fold in the icing sugar and almonds and spread over the apple
- Bake in a pre-heated oven at 200 degrees for around 10 minutes
For a springform pan measuring 24 cm in diameter
